Welcome back to the Raggedy Bits kitchen for 2017! It’s nice to start the year off with a simple appetiser that will hopefully be enjoyed as much as myself and my family do! This delicious Caramelised Onion, Proscuitto and Potato Tart is perfect for when you’re entertaining or can be turned into a main meal with a nice salad on the side!
Caramelised Onion, Prosciutto and Potato Tart
One of the things I love about this recipe is that there aren’t a million different ingredients and most of the time the ingredients are in my cupboard. Plus there is always some fresh rosemary at hand from our garden.
Recently at my son’s 21st Birthday party, I made up a few trays of the tart and my family demolished it all in minutes! Especially my son. He has a gigantic appetite and I always love to cook for him and the rest of my family. Good food, family, friends and lots of laughter is the perfect combination in my books 🙂
After my son moved out of our home he would always ask me to help him with his menu plan for the week. It was a nice time to spend together perusing all of my cookbooks looking for recipes that he could easily make. It sure is nice to know that he has one life skill under his belt!

- 2 potatoes
- 30 g Butter
- 2 onions Thinly sliced
- 1 tbls honey
- 1 tbls white wine vinegar
- 6 slices proscuitto
- 1 sheet puff pastry
- 1 tbls rosemary sprigs
- 1 tbls oil
- 1 sprig rosemary

- Boil unpeeled potatoes in a small pot until tender. Drain and cool. Peel and slice.
- In a non stick frypan heat butter and oil. Saute onions for 5 minutes or until tender. Turn heat to low and continue cooking for 15 minutes until onions become caramelised.
- Add honey and vinegar and cook for 5 minutes. Add proscuitto and mix through. Set aside to cool slightly.
- Lay pastry on some baking paper on a large flat baking tray. Spread onion mixture evenly over each square with the onion mix leaving a 2cm area around the edge. Keep any excess oil from the onions.
- Place the potato onto the top of the onion mix and drizzel the left over oil from the onions over the top.
- Pop in the oven for 20 minutes or until the pastry is puffy and golden. Cut into squares and then in half and serve, using a pizza cutter.
This recipe can also be served as a main meal with a nice salad.
All measurements are Australian Metric.
