    1. Beat butter, sugar with electric mixer until light and fluffy. Add the lemon rind and egg. Combine.

    3. Sift the flour over the mix and combine.
    4. Lightly flour a flat clean surface and place on the dough, kneading gently until the mix becomes smooth. Shape into a flatish circle and wrap in clingwrap and refrigerate for 40 minutes until firm.
    5. Remove dough from plastic and roll out between 2 sheets of baking paper until about 5mm thick. If you are making snowflakes like mine you will want the dough to be thick so that the arms of the snowflakes don’t break.
    6. Take your snowflake cookie cutter and begin to cut the snowflakes from the dough. Place the cookies approximately 3cm apart on the lined baking trays. Combine remaining dough and repeat until there is no cookie dough left. Bake for 13 to 15 minutes until golden. Let stand for 3 minutes and then transfer to a wire rack until completely cooled.
    7. To make icing, place eggwhite in a bowl and gradually add icing sugar. Have a separate plate with your pink sparkle sand ready. Spread icing over cookies. Top with pink sparkle sand and let stand for 20 minutes until set. Enjoy!
