One of the traditions that I started a long time ago with my kids was to make a batch of cookies together. Then they would take them to school and give them to their teachers as a gift or to their little friends. It was a really special time and when I reflect on those moments it fills my heart with smiles! One of the cookies that we loved to make was the Pink Sparkle Snowflake Cookies. I’m not sure if it was the sparkles that would get my kiddies so excited or if it was the fact that they knew there would be cookie dough crumbs to nibble on after we had finished making them.

Who else remembers the best part of baking with your mum or your granny was licking the spoon? I think my kiddies were no different! They would end up with cookie mix from ear to ear making these cookies at Christmas time! Ohhh, the giggling that would occur! Sure made me smile!
Then there was always that fun part of getting their hands dirty when you add the flour! They would make a mess but I didn’t care! The delight on their faces was all worth it!
Served with a glass of milk made the perfect treat for afternoon tea! I hope you enjoy this recipe as much as my family has and would love to hear about any traditions you have for Christmas!

Pink Sparkle Snowflake Cookies
Add some sparkle to your Christmas baking or gift giving this year with these Pink Sparkle Snowflake Cookies.

Beat butter, sugar with electric mixer until light and fluffy. Add the lemon rind and egg. Combine.

Sift the flour over the mix and combine.
Lightly flour a flat clean surface and place on the dough, kneading gently until the mix becomes smooth. Shape into a flatish circle and wrap in clingwrap and refrigerate for 40 minutes until firm.
Remove dough from plastic and roll out between 2 sheets of baking paper until about 5mm thick. If you are making snowflakes like mine you will want the dough to be thick so that the arms of the snowflakes don't break.
Take your snowflake cookie cutter and begin to cut the snowflakes from the dough. Place the cookies approximately 3cm apart on the lined baking trays. Combine remaining dough and repeat until there is no cookie dough left. Bake for 13 to 15 minutes until golden. Let stand for 3 minutes and then transfer to a wire rack until completely cooled.
To make icing, place eggwhite in a bowl and gradually add icing sugar. Have a separate plate with your pink sparkle sand ready. Spread icing over cookies. Top with pink sparkle sand and let stand for 20 minutes until set.
