  1. Boil unpeeled potatoes in a small pot until tender. Drain and cool. Peel and slice.
  2. In a non stick frypan heat butter and oil. Saute onions for 5 minutes or until tender. Turn heat to low and continue cooking for 15 minutes until onions become caramelised.
  3. Add honey and vinegar and cook for 5 minutes. Add proscuitto and mix through. Set aside to cool slightly.
  4. Lay pastry on some baking paper on a large flat baking tray. Spread onion mixture evenly over each square with the onion mix leaving a 2cm area around the edge. Keep any excess oil from the onions.
  5. Place the potato onto the top of the onion mix and drizzel the left over oil from the onions over the top.
  6. Pop in the oven for 20 minutes or until the pastry is puffy and golden. Cut into squares and then in half and serve, using a pizza cutter.
